Morning meal has 45 grammes of protein
This might be one of my favorite egg dishes right now.
It makes a perfect breakfast and can be made in about 15 minutes. It starts with a 250-gram potato, which I won’t peel. Instead, I’ll use a brush to clean it in my sink under cold water until all the dirt is gone. I’ll then cut the potato into small cubes.
The best way to do this is to cut off one big slice and use it as a stable base. I’ll do the same thing with the outside pieces, but instead of cooking them in the pan, I’ll put them in a bowl and microwave them first. This will make a layer on the outside of the potatoes that will make them crispy when they’re fried. You can also cook them raw, but it will take longer, and you might end up with burnt potatoes.
I’ll microwave them at 600 watts for 5 minutes. Keep frying until the awnings start to get caramelized, too. Then, use your spatula to make three holes in the pan so the eggs can fit. I will again put a tiny bit of oil in each hole and then crack the eggs. If you want to use egg whites for less calories and more protein, I would suggest mixing one whole egg with 100 grams of egg whites. This works pretty well.
Turn down the heat to medium-low so the bottom doesn’t burn. Add a strong pinch of salt and freshly ground black pepper. I’ll also sprinkle some chili powder on top, and it’s very important that you add three splashes (about 25 grams) of soy sauce and close the lid right away. This will add a nice umami layer to the whole dish that will make it taste absolutely amazing. About two or three minutes later, the eggs will be done, so turn off the heat.
I’ll also add some fresh cilantro on top, if it works, and there you have it: a potato hash breakfast that comes in a 58-gram cup. This meal has 24 grams of fat and 45 grams of protein.
